The New York strip comes from the short loin region on the cow. Situated behind the rib and above the flank, the muscles in the short loin region do not see a lot of activity during the daily life of the cow. For this reason, the meat here is one of the more tender cuts.  This translates into a moist, juicy, and tender steak as the fat cap helps baste the meat and keeps it from going dry. This steak has intense beef flavor. A little seasoning, and a quick sear should do it most of the time. 

The name New York Strip stems from its close association and geography with the city, with many noted restaurants offering this as a signature dish from the early 1800’s.
